Pound Cake Parfaits


I grew up with pound cake. Homemade pound cake was a staple at every family event made by my Mom and Grandma. And to be honest I'm not sure I've made one before last Sunday. But I was craving a good pound cake and decided on a sour cream pound cake for our small group. 

I will vouch for it, it was good! And we had leftovers. So the next day I rounded up a few mason jars and made parfaits with leftover whipped cream and berries.






Ingredients
2 slices of Paula Deen Sour Cream Pound Cake
3 mason jars
Whipped cream
Blackberries and strawberries

Layer cake with whipped cream and berries. Cover and refrigerate.

So good and so easy! It tastes better the longer it sits. I don't think there is a wrong way to make this dessert. And perfect for a summer day. Do you eat pound cake?

Almost a week since I last blogged! I caught an illness from our two kids and spent Mother's Day weekend recovering. It turned into a very relaxed weekend with more time to read. I started Kisses from Katie and found myself thinking often of my brother and his family who live in Kenya. It is a beautiful read that I definitely recommend (though I am not quite finished with the book!)


And wonderful news here in Minnesota! And after months of cold the trees are blooming. We even hit 90F yesterday. I live for hot weather! Summer is my favorite season and I am so excited to wear flip-flops. What do you think of summer? I know not everyone shares my excitement for warm weather!
